CREAMY LEMON SHRIMP PASTA

INGREDIENTS


11 jumbo shrimp or 1 lb. large shrimp, cleaned and deveined

2 tablespoons of olive oil

½ teaspoon of red pepper flakes

3 large garlic cloves, sliced or chopped

1 ½ cups of heavy cream

1 large lemon, cut in two’s

1 teaspoon of dried oregano

½ teaspoon of white pepper

¼ cup of parsley, chopped

1lb pasta of choice, cook according to packaging


PREPARATION


Turn your stovetop to a medium heat and add in your olive oil. Once the oil is warm add in your red pepper flakes and garlic cloves stir for a couple of seconds and add in your shrimp. Season your shrimp with salt (to liking) and squeeze a bit of lemon juice on top. Sauté for a couple of seconds we want to sear the shrimp without cooking it through; you have the option of taking your shrimp out and placing it onto a plate (this prevents from overcooking the shrimp) or leaving it as is.

Pour the cream onto the pan and add in your dried oregano, white pepper and salt (for this step I used about 1 ¼ teaspoons of salt) turn your stovetop to a medium high heat so we can get the cream sauce nice and thick this should take about 5-7 minutes. Place the shrimp back in the thickened sauce if you left it out in the beginning. Turn down your stove top to a low heat and squeeze the rest of the lemon juice on top.

Sprinkle the chopped parsley on top and stir. Add cooked pasta onto the mix and stir gently until the pasta is covered in the sauce. Sprinkle the top of your pasta with leftover parsley and serve right away!
